Green fig preserve is made with completely unripe figs. They are soaked, boiled, steeped in syrup, and finally poached in it. Delicious on toast or a hot scone, fig preserve has uses well beyond breakfast. Try it with cheddar cheese on a cracker or in a grilled cheese sandwich.
